Grilled-Barbecued Eggplant Naan Pizzas

One of my favorite vegetarian grill recipes for a warm summer day.  So simple.  So easy.

 

What you need:

1 large eggplant- 1/4" cut rubbed with salt

Garlic Naan- frozen or homemade

Tomato sauce (your preference)

1 cup of shredded mozzarella

Barbecue dressing- recipe follows

Barbecue Dressing:

1/4 cup of Sweet Baby Rays

1 tsp of crushed pepper

1 pinch of salt

Dash of Garlic Powder

Mix all ingredients thoroughly- taste and adjust accordingly-  Note: Keep in mind I love spicy food!

Step 1

On a gas or charcoal grill- heat the naan and eggplant separately on low to medium heat.

Step 2 

Once naan is warm; brush tomato sauce and let sit.  Lightly brush barbecue concoction on eggplant.

Step 3

Once eggplant is grilled- place on Naan

Step 4

Sprinkle Cheese on pizza and let it melt for about 5-8 mins.

Step 5

Once cheese is melted drizzle barbecue sauce over pizza and Viola!

Side note:  the Naan is optional-  try using the eggplant as the base and dress it to your liking.
